When a huge box of Avocados arrived from Paradise Grove, I started looking back through the recipes I had shared on the blog to see what in the world I could make again. The only one in my family that would even consider eating avocados is me, so I had to find ways to hide them in the food or just plain decide I was going to chomp down on those delicious foods!
Avocados are great to use for any gathering because they pair wonderfully as appetizer, dip, or toppings for favorite sports foods. In fact, with March Madness right around the corner, I am going to be sure to have some recipes ready for the big game time!

I love avocados. They are so delicious and good for you, too! Avocados have been called one of the world’s healthiest foods because they provide fiber, potassium, folic acid, B vitamins, Vitamin E, and also help the body absorb other nutrients more easily. The fat in avocados is the “good fat” and they’re just good for you!

Ingredients:

  • 1 package mixed salad greens with spinach
  • 3/4 cup sweetened dried cranberries
  • 3/4 cup glazed walnuts
  • 1 can mandarin oranges, drained
  • 3/4 cup crumbled bleu cheese (Can use feta as well!)
  • 1 Paradise Grove avocado – peeled, pitted and diced
  • 4 tablespoons cranberry vinaigrette salad dressing, or to taste

Paradise Grove Avocados – delicious healthful yumminess

In a magical land, far far away, in the foothills of California’s Santa Ynez Mountains, is a special place, known only to a select few, called Paradise Grove. There, in the abundant sunshine and beautiful cool Pacific breezes a rich buttery fruit known as the Haas Avocado grows and flourishes.

A few weeks ago, by way of special courier (disguised as a UPS delivery man) a package arrived here in the lost world. A veritable treasure chest brimming with delectable goodness – huge green orbs of avocado loveliness just begging to be eaten!

Oh how hard it was to watch and wait as they slowly ripened into the perfect state of edibleness (is that even a word?) but I forced myself…and when the day finally arrived that the first fruit reached it’s peak, I couldn’t even wait to bring out the cookbook…I simply sliced it, put it between two slices of whole wheat bread, added tomato, closed my eyes and took a bite…
